What is your favorite summer recipe? Mine is summer rolls! Summer rolls with peanut sauce! Yum! I love them like soooo much and ever since my good friend from Laos once made them for me (while I was living in the US), I make sure to have them at least once a month during the warmer months of the year.
They are easy to make, even though it takes a little bit of time to chop everything and to actually make the rolls. I like to make them with guests and have the whole process of preparing and rolling being part of our dinner time.
The most important when making summer rolls is…? Yes! The peanut sauce! It’s the peanut sauce that takes summer rolls from yummy to heavenly. There are tons of recipes out there, most of them vegan as well. I am a lazy cook so I make the probably easiest peanut sauce there is. I do not even cook it but just blend everything in my vitamix blender… but hey, let’s start from the beginning.
Here is what you need for the summer rolls:
Rice paper wrappers (as many as you like to make)
2 carrots, julienned
1/2 cucumber, julienned
lettuce, cut into strips
smoked tofu, cut into strips
100-200g rice noodles (depending on if you like more or less veggies in your rolls)
Begin by making the rice noodles according to packet instructions and chop all other ingredients.
When you have everything ready sit down with a big plate filled with some warm water (you can also use a clean pan) and dip each rice paper wrapper carefully into the water, leave it for a few seconds only and put it on a plate. Start filling the wrapper; add rice noodles, all julienned vegetables and thai basil and cilantro according to taste. Add some chopped peanuts on top.
Once you finish with the filling, start rolling like a burrito. Fold sides over and start rolling from the bottom making sure you hold the filling tighly with your other hand. It takes a few gos to get the knack of it; mine still look terrible. But hey, they will be yummy anyway, so do not worry 🙂
And here is what you will need to make an easy peasy peanut sauce:
6 heaped tbsp peanuts (baked in the oven for some 20 minutes to add flavor)
You can also use peanut butter instead
2 tbsp coconut cream
juice of 1 lemon
tamari or soy sauce to taste (around 1-2 tbsp)
1cm fresh ginger
a small piece of fresh chili
1 garlic clove
Place all ingredients except for the water in the your high speed blender. Begin by adding a little water and start blending all while pourring little by little more water into the sauce. Continue until you have a creamy, thick sauce.
I always use raw peanuts for my recipes and roast them myself. Like that I can make sure I get exactly what I like and no additives etc. I use raw peanuts from Korodrogerie and roast them in the oven for 20 minutes at 190°C. The roasted peanuts are used for my peanut butter, peanut sauce and to make chopped peanuts to sprinkle on top of my summer rolls.

You can use all different kinds of veggies to put into your summer rolls and you can also play around with different herbs. In case you cannot find thai basil, use some mint leaves instead. I think thai basil is so important for the “right” flavor but mint will make a choice too.
Summer rolls are eaten cold so they are also perfect for a summer picnic or as to go lunch. The peanut sauce will last for 2-3 days in the fridge so you can easily prepare it in advance.
