Rocket Pesto (Vegan & Oil-free)

Spring is pesto- time, isnt it? All the greens are back on the farmers market, there is wild garlic in the woods, and nettles in the garden. I love to make pesto with all kinds of greens. This one here is made with rocket but you can easily exchange the rocket with whatever kind of greens you like (wild garlic, nettles, basil, parsely, etc.)

As most of you know I eat a high carb low fat vegan diet, or call it a whole food plant based diet if you prefer. Anyway, I try not to eat any oils, since they are a refined and not a whole product and I try to eat whole foods only. So this pesto is oil-free and vegan 🙂

Here it what you need for your super healthy super yummy pesto:

100g Rocket
150g Cashews
30g Nutritional Yeast
Juice of one big lemon
One clove of garlic
Salt/Pepper as you like

Just add all ingredients to you food processor and watch your pesto become real 😉

If it is not creamy enough, just add some lemon juice!

This pesto is done in like five minutes, its super healthy, and its so refreshing and yummy! My little one (she turned 1 on Sunday!) actually ate it with a spoon – so it seems to be an easy way to make small children eat their salad 😉

By the way, I had einkorn wheat noodles (have you ever heard of this before?) with the pesto and wow, they were so good! Einkorn is an ancient kind of wheat with plenty of antioxidants and a wonderful nut like kind of taste.

I am always amazed about how the easiest dishes become my favorite ones again and again. The other day we had like nothing in the house except for oranges and walnuts, so I put oranges and walnuts in the food processor and added some garlic and we had this kind of pesto with spaghetti. It really was just blending left overs together and heck, it was sooo delicous! So now you get an idea of how I come up with my recipes 😉

    I have never heard of that pasta, but it looks great. I love pesto too, and this seems like a even healthier version! Can you explain exactly what nutritional yeast is and why it’s used?
