Red Lentil Pesto Spread (vegan and oil free)

Today I want to share a recipe for one of my favorite sandwich spreads – one that you can also eat with pasta, potatoes, rice or what so ever. It is the perfect all-for-one spread.

It is super easy to make this pesto spread and you only need a few ingredients. Even though it contains cashews, it is still very low in fat compared to any other pesto or bread spread (which usually contains tons of oil). Because of the lentils it is pretty high in protein and loads of garlic and lemon juice will make sure you get a bunch of vitamins and minerals with this paste.

Red Lentil Pesto Spread

Here is what you will need:

3/4 cup red lentils
1 handful dried tomatoes
1 handful cashews
1 big clove of garlic
1 lemon
1 Tbs pesto spice mix

Usally dried tomatoes come pretty salty so you will not need any extra salt. In case you use dried tomatoes that come without salt, you may want to add some salt to the red lentil pesto spread.

Let the dried tomatoes and cashews soak over night. If you have a high speed blender, you can try using them without soaking.

Cook the lentils until soft. Press the juice out of the lemon.

Add the lemon juice, the lentils and all other ingedients to your high speed blender and blend well.

Season to taste with some chili or pepper if you like it a little more spicy.

    Oh how I live spreads like this one, perfect for a sandwich and looks delicious☺I’m making a lot of them myself, to my red lentil spread I like to use curry and turmeric, but right now I love white bean spread with baked garlic and also roasted red pepper spread with sunflower seeds, yum😋 Have a lovely week, hugs☺☺☺
