Pistachio Icecream (vegan & sugarfree)

I have found my new favorite icecream of all times! Pistachio-avocado-banana-vanilla icecream! Believe me, this is the creamiest, sweetest, most mouthwatering icecream ever. And it’s 100% healthy! Nothing bad in there, only the best ingredients that fuel your body and helps you stay healthy and fit. Sounds good? I think so 🙂

Let me tell you more about the healthy benefits of pistachio – it will make you enjoy the icecream even more 😉

Pistachios contain most of the nutrients that are required by humans for complete health. They contain loads of fiber, phosphorus, potassium, thiamine, vitamin B6, beta-carotene, lutein, calcium, a whole lot of iron, magnesium, zinc, copper, manganese, vitamin C, E and K, folate and a whole lot of other phytochemicals. All of these nutrients make pistachios ideally suited for better health.

For two big bowls of pistachio icecream you need:

100g pistachios
1 avocado
3 frozen bananas (freeze them at least 24h without skin)
1 big handful of dates (use more if you like it very very sweet)
Some vanilla

And a good blender

Grind the pistachios first, leave a few bigger pieces if you like. You can use any grinder or blender with a grinding-tool (like this one from Klarstein). Puree the dates with some water. The pureed dates and grinded pistachios will blend easier with the other ingredients than the whole pieces.

Next, add the avocado, pureed dates, pistachios, frozen banana and vanilla to your high speed blender and mix everything very well. In case you have a very strong blender, you can also use frozen avocado. It will make the icecream firmer.

Enjoy a whole a big bowl outside in the sunshine without feeling guilty for even a second – because this icecream makes you healthier with every mouthfull 🙂

    Ich mag Eis sehr gerne, aber ich habe es noch nie selbst gemacht. Und ehrlich gesagt sogar noch nie die Sorte Pistazie probiert… Ich bin eher immer jemand, der ständig nur Schokolade nimmt… 😉

    I LOVE pistachios! And I also have an avocado obsession so this sounds amazing to me. I have been really into making healthy “ice cream” lately. The other day I made a huge bowl of it with frozen strawberries, bananas and sunflower seeds.

    I never tried to make ice cream at home, that your recipe is fantastic! The pistachio is one of my tastes favorite with raspberry, banana, coconut, strawberry, blackberry, I definitely want to try this recipe!

    Ich würde so gerne Bananeneis machen, leider funktioniert unsere Kühltruhe so gar nicht und nichts gefriert.
    Daher werde ich nachher mal ‘cheaten’ und dieses neue vegane Eis vom Lidl genauer betrachten… 🙂
