Mango Matcha Smoothie – The Most Refreshing Summer Drink!

You want to know the number one reason for why I like summer? Fruits! Fruits, fruits, and even more fruits. Last weekend I got a case of mango on the market (and my first watermelon of the year!) and I am sooo happy to be able to share a mango recipe today. This Mango Matcha Smoothie here is my absolute favorite drink at the moment. It’s super refreshing, gives you loads of energy, it tastes divine and it can be made either as a snack-drink for in between or (with added bananas) easily become an entire meal.

And even if you do not like matcha, you can still try this smoothie! I think that matcha adds just the right little extra to it, but it absolutely works without!

You only need a very few ingredients for this smoothie, a high speed blender – and a nice jar. My jars are former peanut butter jars that I wash and reuse as drinking glasses (or for salads, sauces, soups etc. on the go). I think it is more sustainble to use jars that you have in the house anyway, instead of buying new ones. But in the end everything is great as long as you can reuse it again and again. The same holds true for the straws; no matter if you prefer glass, bamboo or stainless steel it is all GREAT! Just please do me the favor and stop using single use straws.

This nonsense just needs to stop! My glass straw is from HALM and they are my favorite (I tried a few others before – they all broke over the years since they weren’t as thick as the ones from HALM).

But now to the recipe…

Here is what you need:

1-2 mangos (fresh or frozen)
1 teaspoon matcha (I use Kissa Matcha Basic for smoothies, ice, and cooking)
2-4 cups rice-coconut-drink (or a light coconut milk)

Optional: 1-3 bananas

So depending on how thick you like it, you can use more or less rice-coconut-drink. When you want the whole smoothie to be more of a meal then just feel free to add bananas to it. Or more mango if you like! The bananas make the smoothie creamer and richer, whereas the mango is really refreshing. Both tastes divine, depending on what you feel like having.

Add all ingredients except for the ice in your blender and blend until smooth. Then add ice – either leave the ice cubes like that or blend carefully once again.

This mango matcha smoothie makes a great summer breakfast but I also love it on a hot afternoon, enjoyed outside in the sunshine. The matcha will give you the right kick to keep on going, no matter how hot it gets, and the mango fuels you with loads of nutrients – and this one of a kind summer taste. The rice-and-coconut-drink adds some extra exotic flavour to the smoothie. In case you cannot find rice-coconut-drink, you can also use a light coconut milk, or just a tiny little bit of the really thick and creamy coconut milk. It is just about giving a little bit of flavour and texture.
