Last Minute Christmas Gift DIY: Vegan Gingerbread Granola

You are looking for a very last minute Christmas gift? I’ve got you: make some homemade gingerbread granola and I am sure you will someone happy 🙂

This granola is the best I have ever made. We all (my husband, little girl, and I) actually ate it like that with a spoon because it was so good. I used loads of gingerbread spices to make it Christmas like and you can put it into glass jars and even make a pretty label to have a beautiful small gift ready for the celebrations!

Isn’t it crazy that Christmas is already tomorrow (here in Germany we celebrate on the 24)? It was my birthday yesterday and like every year, the days from December 22 until January 1 are crazy. Crazy and soooo beautiful! I made a brunch for friends and family for my 30s birthday yesterday and I had the most beautiful day. Today is all about putting up the Christmas tree and preparing for tomorrow. Then tomorrow is Christmas here at home with my husband and child, and then on the 26th we will travel to Berlin and come back the 27th just to spent a few hours at home before my husband’s family arrive. We then all go to a farm close to Leipzig where we will stay until January 1st. Just enjoying nature and a little bit of quiet time before 2018 begins with tons of new adventures (2018 will be great! I am so looking forward to it! So much will change in my life and I cannot wait to see everything that will happen!).

Aaaaanyway. Now to the granola

Here is what you will need:

2 cups oats

1 cup almonds, hazelnuts, walnuts and/or other nuts

1/2 cup sunflower seeds

1/2 cup raisins and/or goji berries

1/4 tsp of salt

2 tbs gingerbread spice mix

1/3 cup maple syrup or agave (or honey if not vegan)


Preheat your oven to 180°C

Blend together all ingredients EXCEPT for the raisins and/or goji berries.

Add the mix to a baking tray and put into the oven.

Bake for around 18 minutes, stir a bit after 10 minutes

Then add the raisins/goji berries and bake everything for another 5 minutes.

    It looks delicious! I can see myself wanting to eat it right out of the jar with a spoon as well. I bet it smelled incredible as it was baking. Hope you have a lovely holiday!
