Are you in with me in going refined sugar free in 2020? Then here we go with a recipe that you will looooove – because it is free of refined sugar, it is super easy to make and it is beyond delicous! Meet my honey coated cashews with only three ingredients!
You like cashews? You like sweets? You like the taste of salted caramel? I’ve got ya! I am a cashew-holic, making everything with cashews (from cream for my sauces over roasted cashews on quinoa salad to cashew cream cheese). However, these little treats top it all! Not only does it only take some five minutes to prepare this snack, it is also hiiiiighly addictive. I’m usually making batches of 200g and guess how long they last when I have my husband and daughter around? You won’t even have the time to ask “may I have some too” because they are gone so fast! Jump on them or forget about getting some. That’s how things are going on here 😀
This recipe contains honey – and therefore isn’t 100% vegan. I haven’t tried the recipe with agave syrup yet, so I’m not sure if it’s working! I tried it with coconut sugar but it’s just not quite the same and we didn’t like it as much as the honey version. If you aren’t eating honey, you can try agave syrup but don’t blame me if it does not turn out the way you want it to.
Also, this recipe is super simple – however, you can always pimp it up! I made this basic version with only three ingredients, but you can add other ingredients to it! Be it sesame seeds, cocoa nibs, spices, or raisins – feel free to try around in your kitchen!
Finally, this recipe is aboslutely vanlife friendly: you do not need an oven and it is done in no time in a normal frying pan!
Here is what you need for my honey coated cashews:
200 g Cashews
1 tbs Honey
1 pinch of salt
Optional: cinnamon, vanilla, chili, cocoa nibs, sesame seeds, raisins, you name it …
How to make them:
- Put your cashews into a frying pan and fry them until they are golden (don’t use any oil!).
- When your kitchen smells amazing of roasted cashews you know they are ready. Turn off the stove.
- Add the tablespoon of honey to the cashews in the pan and blend carefully.
- Add the dash of salt and blend again.
- Put the cashews on a sheet of baking paper to cool down.
We used to have cookies for an afternoon snack with our hot chocolate/matcha latte for the past few months. However, with the new year we stopped eating refined sugar and we are fully into finding new delicious things to snack on in the afternoon. So far these cashews are our favorite but we are all into finding new delicous treats.
As we are living in a motor home, our possibilites are slighlty limited. Back home I used to make all those delicous raw vegan treats with my vitamix, but here in the motor home, our electricts doesn’t allow me to turn our vitamix on full speed and I can hardly make more than our banana-smoothie-bowl in the morning with it. So I am learning how to make sweets without blender and whenever I am coming up with something new, I will make sure to share it with you. Here on the blog or on my instagram!
