Creamy Spinach Peanut Noodles (vegan)

In between all those Christmas posts, it is time for a little creamy lunch idea. I love creamy and warming dishes in winter and these creamy spinach peanut noodles do satisfy all my cravings on a cold winter day. They are easy and fast to make and I am sure you will love them as much as I do.

I made this recipe with buckwheat and sweet potatoe noodles from Terra Sana but you can make it with any kind of noodles you like.

So here is what you need for around 4 portions:

500g noodles of your choice

450g frozen spinach
1 Onion
2 Tbs tomatoe paste
3-4 Tbs Peanut Butter
1 Ts yellow curry paste
1-2cm ginger
1 Tbs sweetener of your choice (e.g. rice syrup, agave syrup)
3 Tbs soy sauce

Optional: Chickpeas

How to make:

Boil the noodles.

Cut the onions into small pieces and put them into a pot, add the spinach and a little bit of water. After around 10 minutes add the ginger (grind it or cut it into small pieces), the tomatoe paste, peanut butter, and yellow curry paste. Add the chickpeas if you like. I like to add chickpeas for a little extra fiber and protein. When the spinach seems to be ready add the sweetener and soy sauce (to taste).

That’s it. Lunch is ready 🙂

I really like to make this easy dish on busy days and this is why I thought it might be a good idea to share it now; these days just before christmas are pretty busy aren’t they?

I will make all the christmas food shopping by Tuesday, on Wednesday we will prepare my birthday which is Thursday. Then on Friday we will prepare our Christmas menu and then it is already christmas eve! In between there is a lot of work to be completed and a few gifts to be bought. Oh my… I am looking forward to it anyway 😀

    Looks amazing, I love spinach in creamy sauce!
