Coconut Banana Bread with Vanilla-Sauce (vegan and sugar free)

Today I have an easy and super yummy vegan recipe for you: coconut banana bread with a creamy vanilla sauce that comes with only three healthy ingredients. Ready? Here we go…

So I love banana bread since years and I like to try different versions, sometimes with some added zuccini, sometimes with some cocoa, and sometimes with coconut! Especially now in Summer I love the coconut version. I just think coconut and summer go hand in hand. Would you agree?

The recipe here is inspired by a recipe from Dr. Goerg and all coconut ingredients in this recipe are from Dr. Goerg. So far I think the coconut product from Dr. Goerg and the best ones one can find on the market. There is a huge difference in taste between different brands when it comes to coconut. Especially when using coconut chips, flakes, and coconut cream, I find it very important to have high quality products with a great, aromatic taste.

Here is what you need for one banana-coconut bread:

3 bananas
150 ml coconut milk
100 g coconut syrup
50 g coconut sugar
22o g whole wheat flour
50 g coconut flour
75 g grounded almonds
20 g backing powder
A pinch of salt

How to make?

1.Blend the bananas in your blender so that you get a banana puree.

2. Blend all wet ingredients together, then blend all dry ingredients together. Mix the dry and wet ingredients until you have a nice dough. It can be slightly moist but not too much. When you find it too moist, add some more flour, when you find it too dry, add some coconut milk.

3. Put the dough in a baking tin with baking paper and bake for around 40 minutes at 175°C

Here is what you need for the vanilla sauce:

100 g soaked cashews
100 g dates (deglet nour)
A dash vanilla powder
A little bit of water

Blend all ingredients in a high speed blender. When you used soaked cashews, you will not need a lot of water. When you use dried cashews (only do that when you have a high speed blender) you will need a little more.

You can adjust the amount of water depending on how creamy and thick you would like the vanilla sauce to be.

I like to sprinkle the banana-coconut bread with some coconut flakes and MULBERRIES. I LOVE the combination of vanilla sauce and mulberries. There is another recipe that I recently came up with that is a chcocolate-hummus with vanilla sauce and mulberries, and wow, it’s soooo good! Would you be interested in that recipe too?     Thanks for this recipe, Larissa! I’ve been looking for healthier recipes lately to prepare for my husband since he has been diagnose with hypertension. And of course, even though I’m technically still healthy and all that, I still need to eat healthier and better food.
