I used to love chocolate pudding but never was fully satisfied with the vegan sugar free options – until now! I came up with the yummiest ever chocolate pudding which is not only super easy to make but also 100% healthy; no sugar, no oil, no dairy!
You do not know canihua yet? Canihua is similar to quinoa, yet smaller and it has a dark brown color. It has a nutty and somehow chocolate like taste which makes it the perfect base for a sweet chocolate pudding. Plus it is super healthy, containing loads of fiber, protein and iron. It also has plenty vitamin B1 and B2. You should definetly give it a try 🙂
All you need for this delicious and healthy pudding is a blender and a few simple ingredients:
For four big bowls you will need
200g Canihua
2 handful Dates
3-6 Tbs Cocoa (depending on if you like it darker or lighter)
A dash of vanilla
A dash of water or plant milk
A few cocoa nibs if you like.
Cook the canihua until soft and then add all ingredients to your blender. You may want to blend the dates with a little bit of water or plant milk first if you do not have a high speed blender; just a question of making sure you will not end up with a pudding full of date pieces. Blend everything until you have a smooth pudding. Add some cocoa nibs if you like.
This chocolate pudding tastes great both hot and cold and you can have it for breakfast, lunch or dinner – it is super healthy and because of the canihua it actually is a whole meal. We had it for dinner a couple of times lately because we all love it so much. We eat a huge bowl of it each and we feel completetly satisfied and great afterwards. Go ahead and try and I promise you will not be dissapointed 😉

Looks yummy, I havent heard about canihua before though. Seems very healthy:) I was wondering do you consider to make a post about baby vegan diet? Actually I am kind of curious how it is,especially for the little baby who doesnt drink mom’s milk anymore. We also going for a trip with my husband – finally our holidays:) We’re going by the sea for 5 days, I love the sea so much. We’re planning to jog every morning on the beach:) Have a lovely trip, hugs:)))

This sounds so amazing! I have wanted to incorporate dates into my baking but have been a bit wary for some reason. Masking them with cocoa and turning them into pudding is a surefire way to get me eating them. Thank you for sharing!
